I totally agree with you that everything that's convenient is part of what's killing us.

I cook everything from scratch (pretty much) but boxed greens (as they come in my corner of Canada) serve a purpose in my kitchen. I am not sure I would have quite as many green smoothies and lunch salads if I had to wring and massage kale leaves in the same 15 minutes I have to prepare my kids' lunches and get them out the door in the morning. (Also baby kale is just sweeter, but not available in bulk unless one grows their own.) Dinner is when I use off-the-stem greens and a variety of whole cabbages. The benefits of having greens 3 times per day outweigh the downsides of convenience greens, in my opinion.
